Halibut

My brother, Gary (see above) caught a huge halibut out in the Pacific. He gave us some of the meat and we've been loving it. Thanks Gary! I made fish tacos today... they were so awesome. A definate 5 stars out of 5. The best thing is that they were extremely easy to put together.

Fish tacos:

white fish
2 Tb olive oil
2 Tb lemon juice
put this in a frying pan over medium heat until the fish is flaky.

1/2 C. sour cream
1/2 C. light mayonnaise
1/4 C. chopped cilantro
2 Tb. taco seasoning mix
mix all together

1 C. shredded cabbage
1/2 C. chopped tomatoes
juice of 1/2 a lime
mix all together

Take a taco shell, put a little fish on the bottom, put the sauce over the fish and top it off with the cabbage mixture. Pass around salsa so everyone can add however much they want.
